Taco Shell Technology
A patent-pending approach to starch-based edible shells with rigid sidewalls and a flexible connecting region.
Rigid Sidewalls. Flexible Connection.
One pending patent application
Issue: How to limit taco shell breakage during handling, transportation, and filling.
Our patent-pending technology for producing taco shells and other starch-based edible shells addresses this issue by incorporating a flexible connecting region between rigid sidewalls. This flexible region is designed to reduce shell breakage and cracking.
Controlled Heating and Moisture Removal
The process selectively controls heating and moisture removal in different regions of the shell. The sidewalls become self-supporting while the connecting region retains greater moisture and flexibility.
Flexible Connecting Region
The connecting region acts as a flexible hinge between the rigid sidewalls. It is designed to accommodate bending and reduce cracking during handling, transport, and filling.
Methods, Apparatus, and Shell Structure
The technology encompasses forming methods, manufacturing apparatus, and the resulting edible shell structure.
